Amaretti bianchi

The classical amaretti are a base also for other recipes, such as bread cake. Eat them while fresh.

Ingredients

  • 500 g sugar
  • 200 g bitter almonds
  • 200 g sweet almonds
  • 3 egg whites

Instructions

  • Soak the almonds in a liter of boiling water
    • leave them for 10 minutes
    • soak them in cold water and peel them
    • dry them in the oven on a cookie sheet
    • grind them in a mortar
  • Mix well the egg whites and the sugar
    • add the ground almonds
  • Gease the cookie sheet
    • put the paste in heaps the size of a nut
    • bake at moderate heat for about 20 minutes
  • Caution: do not open the oven during the first 10 minutes
