Mascarpone sauce

Mix 400 g mascarpone in a bowl using a wodden spoon. Add 8 spoons of powder sugar and one by one 4 egg yolks. Slowly pour 6 spoons of brandy. Keep stirring and add delicately 4 wipped egg whites. Distribute the cream in 8 coupes and keep them in the refrigerator for several hours. Before serving, decorate with chocolate.

In the most popular recipe, the coppa al mascarpone is doen in the winter with sweet moro oranges (sweeter than sanguinelle = blood oranges).

Ingredients for 12 people:
600 g mascarpone
6 spoons powder sugar
6 eggs
9 spoons Grand Marnier
3 blood oranges
Recipe:
In a terrine mix the mascarpone with a wood spoon. Add sugar and one by one the egg yolks. While stirring, add slowly the Grand Marnier. Whip the egg whites to snow and delicately mix them in. Peel the oranges and cut in small cubes; delicately mix them in. Distribute the cream in 12 coupes and keep them in the refrigerator for several hours.
