Torta di pane

This the most typical sweet of Ticino. It is the classical way to recycle bread.

Ingredients

  • 300 g old bread
  • 5 amaretti
  • 1 l milk
  • 1 egg
  • salt
  • 1 lemon (juice and peel)
  • 150-200 g sugar
  • 1 spoon cocoa
  • 1 small glass grappa nostrana
  • 200 g raisins
  • 1 portion vanilla
  • 50 g cedar
  • 50 g pine nuts
  • butter

Instructions

  • Bring the milk to boil and soak the bread in it for at least 4 hours (better: over night)
    • mash the bread with your hands
    • add the other ingredients, except the pine nuts and the butter
  • Grease a cake form with the butter
    • pour the dough
    • sprinkle with the pine nuts
  • Bake for 2 and a half hours
